Finding yourself in Viareggio you will often come across strange names like "Scarpaccia" and "Panzanella", and these are only the smallest part of all the typical dishes a must eat in Viareggio. Here the cuisine is mostly based on fish, but certainly there is no shortage of various meat specialties.

The first par excellence are the Cacciucco Viareggiano, a fish soup, crustaceans and molluscs, and Paccheri alla Trabaccolara with blue fish, tomatoes and chilli, while the second unmissable courses are there Scarpaccia, a savory pie made with zucchini, and the Scottiglia, a stew of mixed meats. There panzanella instead it is a side dish of soaked bread seasoned with fresh vegetables, often also used as an appetizer. IS to conclude at best, Cenci and Torta coì Bischeri for dessert.
