Specialties and typical dishes

As happens with the cultural aspects of Trieste, so also in the traditional cuisine of the city the dishes are born from the influence and exchange with different populations (mostly of Balkan origin). This is why, for example, despite being overlooking the sea, many local dishes are based on meat, legumes and other products of the earth. Starting with the appetizers, two dishes on the menu of most restaurants are the cooked ham in a crust, smoked and wrapped in bread dough (to be cut with a knife!) and the liptauer, that is a cheese mousse of Slovenian origin enriched with paprika and cumin, preferably to be spread on a warm crouton. Among the Trieste first courses, the soups stand out, among which the jot, based on sauerkraut, potatoes, beans, sausage, smoked bacon and aromatic spices, or strucoli, similar to cannelloni but cut into slices and stuffed with meat, ricotta and spinach or, alternatively, walnuts and raisins. Among the latter, it is impossible not to mention the g and porzina with capuzi (made with boiled pork, seasoned with mustard, horseradish and sauerkraut). Finally, among the traditional desserts we find the pin (mostly consumed under the Easter holidays), consisting of leavened dough, rum, orange peel, lemon and vanilla. Also very good cook, a sort of whipped butter and sugar soufflé, with breadcrumbs, eggs and flavorings of your choice.
