La City of the Lantern, as Genoa is also known, is a mix of ethnicities, cultures and, consequently, of culinary traditions. The ingenuity of the local population is reflected in the typical dishes, consisting mainly of legumes, fish and wild herbs.

Genoese specialties and typical Ligurian cuisine

The Genoese have given life, over time, to a simple but very rich cuisine, composed of vegetables and aromatic herbs, which also requires the abundant use of olive oil. As a seaside city, it has attracted and made its cultures very different from each other, including the culinary ones, thanks to the coming and going of goods and people that have followed one another over the years.



What are the typical Genoese dishes? Obviously, the first specialty that comes to mind is the pesto, the sauce now famous all over the world, which is usually combined with trofie or gnocchi, but can also be eaten alone! Another first course is composed of pansotti, a pasta stuffed with vegetables topped with a sauce made from cream and nuts. Among the most popular second courses we can only list fish-based specialties, such as fried calamari and anchovies and stockfish "accommodated" with Taggiasca olives, pine nuts and potatoes. Appetizers are scarce but, in their place, there are two delicacies that can be eaten at any time of the day: focaccia and farinata. It is the classic tavern, which has a small and welcoming environment. The specialties are almost all fish, very fresh.

To call it just a sandwich shop is an understatement for this place, a true institution of the city for lunch breaks but not only. It can be recognized by the omnipresent queue of people who wait their turn to grab a sandwich, a queue which, however, is worth doing once you have tasted the products offered. The menu does well 150 different types of sandwiches, the combinations are almost infinite. In addition to sandwiches, you can also taste roast in Genoese green sauce, beef carpaccio and much more.

3 - The Locanda degli Adorno

Behind the Old Port stands this inn, which promises its guests typical dishes prepared with genuine ingredients and with an excellent value for money. 4 - Zimino

It is a takeaway restaurant specializing in stewed dishes and poor traditional dishes, such as cuttlefish in zimino, fish soups, codfish and vegetable minestrone, as well as various quiches. Its peculiarity lies in the take away formula, even if there is some seating.
