2 - Risotto with Treviso red radicchio

One of the specialties of this city is without a doubt the radicchio, to which the IGP recognition was returned (Protected Geographical Indication) from the European Union. It is about a variety of chicory with an intense dark red color and white streaks. It has a very crunchy texture and a bitter taste. It is used in so many recipes.

3 - Risotto with asparagus

4 - Bigoli

They are a very popular type of pasta in Veneto. It is about a long pasta, made with soft wheat, water and salt, similar to a large spaghetti.

5 - Sopa Coada

It's a first course typical of Treviso cuisine. Its origin is not very clear, but it has been served in taverns for a very long time.
E' a pigeon pie, with a slightly dry consistency, in fact it is often served with a cup of boiling broth next to it to be poured over or eaten separately, according to your tastes.

This recipe, like many others, finds its birth in the peasant tradition and the pigeon was, and still is, a very present bird in this area. It is prepared by alternating layers of pigeon meat with white stale bread and then cooked very slowly in the oven. Absolutely to try.

6 - Roasted goose with celery

It is defined the second dish par excellence.

The name of this typical dessert derives from the word fregole, which in Italian means crumbs. In fact, outwardly, it looks similar to sbrisolona, ​​even if the ingredients used are different.

It is a'amalgam of flour and sugar, crumbled and then moistened with fresh cream. Once the dough is placed in the pan, it is baked in the oven. Perfect paired with sweet white wine.
