1 - Arancina

If you are in Trapani you cannot miss the arancina, the most famous street food of Sicilian cuisine! It doesn't need many introductions or explanations, it is very well known: it is one stuffed rice ball, breaded and then fried. The classic versions are with meat or butter, but you will find several.

Curiosity: on this beloved specialty there are strong disputes over the name! In Trapani and in Western Sicily it is called arancina, in the feminine, while in Catania and in the eastern part, it is called arancino, in the masculine.

2 - Busiate with Trapani pesto

The busiate are a type of traditional pasta from Trapani, some macaroni with a tube shape twisted on itself. The name derives from the buso branch, an instrument with which they were originally drawn.

Trapanese pestoInstead, it is a typical condiment of the area, used precisely to season pasta. It is made with basil, tomato and almonds, a real delight.

3 - Eggplant caponata

You cannot be in Trapani and not eat the famous caponata, typical of Sicilian cuisine but now widespread and loved throughout Italy!
Thanks to its diffusion, today there are many variations, with different vegetables, but the great protagonist is always the aubergine!

The caponata of Trapani is exclusively based on aubergines! In the original recipe all the other ingredients, such as celery, capers, tomato sauce and onion, are used with the sole purpose of enhancing the flavor of the aubergine even more.

4 - Panelle

Besides the arancina, there is another much loved typical street food in Trapani: we are talking about panelle! This, however, is less known in the rest of Italy than arancina: it is a mixture of chickpea flour, cut into slices which are then fried and served in a sandwich, seasoned with pepper, salt and lemon! The bread used is the mafalda, sandwiches covered with sesame seeds.

There is also a sweet version, which is usually prepared for the feast of Saint Lucia, on 13 December. Sugar and butter are added to the classic dough and they are served filled with custard.

5 - Vastedda

On a trip to Trapani, and in general to western Sicily, you cannot fail to taste the only Italian stretched curd sheep's milk cheese!

Produced in the Belice Valley mainly in the summer season, when you taste it make sure it is fresh. Lovers of cheese and not, this is one of the things to try absolutely!

6 - Cannolo

E' one of the most loved desserts in all of Sicily! It does not need many introductions, certainly almost everyone has tasted at least one in our life.

It is a crunchy waffle filled with ricotta, topped with pieces of chocolate. Perfect to eat at any time of day, for breakfast in the morning, as a mid-morning or mid-afternoon snack and, why not, also to round off lunch and dinner!

7 - Cous Cous alla trapanese

Although couscous is a dish of Arab origins, it is one of the musts not only in Trapani, but also in other areas of the province (including islands). The name by which it is called, and sometimes also written on the menu, in Trapani is Cùscusu.

Obviously, this being a seaside town, the official version is the one with fresh fish! This is now a real traditional recipe, also included among its traditional agri-food products.

8 - Vastase potatoes

It is an unmissable specialty of Trapani, to be eaten as an appetizer or even as a side dish. They are usually found in pizzerias and are ordered as an appetizer instead of the classic chips.
It is baked potatoes with onions and tomatoes. At the end of cooking it must be added abundant mozzarella and is made to melt.
The term "vastaso" stands for uneducated, still unclear why they were called that, perhaps because they are not so light! They are truly a rich and tasty dish, slightly spicy and very stringy! Try them!

9 - Fresh sea urchins with bread and lemon

One of the fish specialties. You will hardly find this dish in restaurants, but its strong point is that it is really easy to prepare.
If you are staying in an apartment, you could try to replicate it independently: you can buy the sea urchins from the fishmonger and once in the kitchen cut them in half, sprinkle it with lemon and collect the red part (the one you eat) with a teaspoon or with bread.

Curiosity: this is a dish of the "poor" Trapani tradition: given the large presence of sea urchins on the coasts of this part of Sicily, once fishermen could eat them directly on their boat during their boat trips.
